Searching for a crab cake recipe? Well, in my cozy book, Haughty Eyes & Alibis, my main characters, Maddie and Maggie, LOVE crab cake sandwiches from Kirby's (a place I just made up!). Honestly, I've never had a crab cake sandwich, but it sounded intriguing, so... I made one!
Below is the recipe. Hope you love it as much as I do 🙂
Crab Cake Sandwiches
16 ounce can of crabmeat
1 egg
3 tablespoons mayonnaise , plus extra for toasting buns
4 teaspoons lemon juice
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon Old Bay Seasoning TM (1/2 tsp if you like it less spicy, but add ¼ tsp salt)
1/3 cup olive oil
6-8 green onion tops , chopped
½ cup crushed buttery round crackers
1 cup regular dry bread crumbs
8-pack of onion hamburger buns
8 slices extra-sharp cheddar cheese
Romaine leaves
For sauce:
½ cup sour cream
2 teaspoons honey
½-1 teaspoon of sriracha type sauce (Korean spicy garlic sauce), to taste
Patties:
Saute onion tops in olive oil in a deep skillet over low-medium heat. Remove; let cool.
In a medium bowl, whisk together egg, mayonnaise, lemon juice, garlic and mustard powder, Old Bay and cooled scallions. Gently stir in crabmeat, being careful not to break up meat. Gradually mix in cracker crumbs, adding until desired consistency is achieved. Form into 8 patties, approximately 1/2 inch thick. Coat the patties with bread crumbs.
Reheat oil over medium heat. Place patties in skillet, and cook until golden brown, about 5 to 6 minutes on each side. Drain briefly on paper towels and keep warm (I put the plate in the microwave without turning it on) while preparing buns and sauce.
Buns:
Spread a thin layer of mayonnaise on buns and toast on a griddle or a clean, unoiled skillet over medium heat until browned.
Sauce:
While the buns are toasting, mix sour cream, honey and sriracha until well blended.
Build sandwiches by spreading sauce on the bottom bun, then place the crab cake, a slice of cheese and romaine leaf, then spread sauce on the top bun as well.
These go great with onion rings. Enjoy!
